Brewing Guide using ORIGAMI Dripper with THE COFFEESHOP

When brewing coffee by hand drip, even when the same dripper and coffee beans are used, the pouring method of hot water, the number of pitches, and the combination with other equipment such as paper filters can have various effects on the flavor and concentration, such as acidity and sweetness of the coffee to be extracted.
The combination of coffee equipment and extraction recipes are unlimited.

we would like to introduce recipes for brewing delicious coffee beans from coffee shops across Japan using the ORIGAMI Dripper.
We hope you will try this recipe at home as one of the recipes for the ORIGAMI Dripper.

In the second installment, Mr. Daichi Hagiwara, manager of THE COFFEESHOP, introduced a recipe for drinking THE COFFEESHOP's beans hot and delicious.
Preparation

Dripper: ORIGAMI Dripper S

Server: Glass Coffee Server with HARIO

Paper Filter:Paper Filter [Cone] *1-2 cup size was used this time.

Coffee beans: 18 g (shallow roast to medium roast), medium grind (TIMEMORE C3 grinder: #16 or so)

Hot water 300 g at 92°C

Spoon for stirring

Kettle

Scale

Silky mouthfeel, gorgeous flavor reminiscent of jasmine, and fruitiness like lemon and green apple.

Recipe

Preparation

(1) Place the ORIGAMI Dripper on the server and set the paper filter with the ribbed part folded on it.

(2) Pour hot water through the paper filter.

(3) Weigh 18g of medium ground coffee into the paper filter.

(4) Shake the dripper to flatten the coffee beans.


[Start of extraction]

(1st pouring) 0'00 - 0'40 sec. 

Pour 40g of hot water, stir 5 times with a spoon, and let it steep for 40 seconds.

(2nd pouring) 0'40 - 0'50 sec. 

After 40 seconds, pour 50g of hot water while turning the entire coffee bean, taking 10 seconds from here.

From here, pour for 10 seconds, wait for 10 seconds, and repeat, but note that the amount of hot water poured changes.

(3rd pouring) 1'00 - 1'10”.

Pour 60g of hot water. Total 150g.

(4th pouring) 1'20 - 1'30 sec.

Pour 60g of hot water. Total weight 210g.

(5th pouring) 1'40 - 1'50”.

Pour 50g of hot water. 260g in total.

(6th pouring) 2'00 - 2'10 sec.

Pour 40g of hot water for the last 6 pitches


Pour in a total of 300g of hot water and wait until the water has completely evaporated.

It takes about 2 minutes and 15 seconds to 2 minutes and a half for the water to completely drain off.


The resulting liquid volume is approximately 270 ml.
