What does a paper filter do?

The paper filter is set in the dripper, and coffee powder is put in and hot water is poured in to filter the liquid containing coffee ingredients. The oil and fine particles contained in the coffee are strained through the paper filter, resulting in a clean, clear taste.

Paper filters are available in bleached (white) and unbleached (brown) colors. We recommend the bleached white type, which has less paper smell and does not affect the flavor and taste of the coffee.

Shapes

There are three main types of paper filter shapes: conical, wave, and trapezoidal.

Characteristics of conical shape
ORIGAMI's conical paper filter is characterized by a deep crease and sufficient thickness.
Since the gap between the conical paper and the dripper is wide, the key is to use a longer extraction time than with the wave type and to stir the coffee as needed.
When using the conical type, which has a thicker layer of coffee powder than the wave type, there is a difference in the substances dissolved from the upper and lower layers of powder due to the difference in extraction conditions between the upper and lower layers.
This gives the extracted coffee a bright, acidic, complex, rich flavor.
Characteristics of Wave shape

When using the wave type, in which the layers of coffee powder are thinner, the hot water takes less time to pass through the layers, and the extraction conditions of the upper and lower layers of powder are almost the same, making it possible to extract a stable coffee.

Depending on the difference in coffee and other factors, either acidity, bitterness, or sweetness should be particularly noticeable.

In addition, the wave filter is characterized by a narrow paper gap between the dripper and the paper, which prevents hot water from escaping from the sides, resulting in high extraction efficiency and a strong flavor even with a short extraction time.

Because the hot water is released from the coffee powder in a stable flow, the extracted coffee has less cloying taste and more sweetness and body.

Recipe for extraction using conical paper

Paper: conical filter

Grind: Medium (slightly finer)

Powder quantity: 15 g

Water amount: 250 g

Water temperature: 91°C

Pouring method: 5 times evenly every 30 seconds with 50g of water

* 1st~3rd pitches: Pour in a circular motion, about the size of a 500 yen coin.

* 4~5th pour: Gently pour in the center.

Total extraction time: fall off

Taste Characteristics: Bright and acidity is intense.

Grind: Medium (slightly coarse)
Powder quantity: 15 g
Water temperature: 91°C
Pouring method: 60cc of water for the first pouring, 90cc of water for the second and third pouring
Total extraction time: Finish at the drop-off

* The first and second pitches are wide and general pouring.
* The 3rd pour gently in the middle.
